Kabab Maqley is a typical traditional Iraqi dish, it is usually cooked during dinner time. You can turn this recipe into a vegetarian dish by removing the beef and keeping the rest of the ingredients and spice mixture. Kabab Maqley can be used as in appetizer dish, can be made into delicious sandwiches. The type of bread that I would use to make a sandwich is pita bread, Iraqi flatbread, and Iraqi bread Samoon. Then I would add mint, tomatoes, cucumber, lettuce, fried eggplant, and onions. It can be used as a side dish with the chicken kabab, Amba salad, and Iraqi black tea is a must.
My mom cooked Kabab Maqley often, it is easy, fast and delicious. It can be cooked in less than 30 minutes, it is an excellent dish for working mothers because it can be prepared and replaced in the refrigerator and cooked as needed.
Ingredients:
- 1 1b of ground beef
- 1 teaspoon cumin
- 1-3/4 teaspoons salt or preferred taste
- 1 teaspoon Coriander
- 1 teaspoon black pepper
- 1 teaspoon allspice
- 1 teaspoon of nutmeg
- ¼ cup parsley finely chopped
- ¼ cup green onion finely chopped
- 2 medium-size tomatoes finely chopped
- 1 small size red onion finely chopped
- ¼ cup cilantro finely chopped
- 1 ½ cup of floor
- ¼ cup of water
- 2 cup of corn oil
Instruction:
In a medium bowl combine ground beef, cumin, salt, coriander, black pepper, allspice, nutmeg, parsley, green onion, tomatoes, red onion, cilantro, flour, and water. Combine all the ingredients together with your hand. It will become like dough.
In a medium-size pan add the corn oil. Let the oil heat for about 1 minute then start to add the Kabab. Wet your hand with water then take small about of the kabab dough, roll it then flatten it and place it in the pan of hot oil. There is the need to wet your hand with water every time you take from the Kabab dough. It will take about 2 minutes on each side to cook.
