
Couscous is a main dish in the North African cuisines of Morocco, Algeria, Tunisia, Mauritania, and Libya. This dish became very popular in the Middle East also in Europe and the United States. Couscous is light and fluffy when it is cooked, it is a very easy and simple dish to cook. I like to cook couscous with mixed vegetables and use it as a side dish, I usually add Tilapia and Macaroni salad with the Couscous to have a full meal. It is very light, healthy, and very filling. You can cook this recipe in less than 30 minutes.
Ingredients
- 2 cups of couscous
- 2 cups of mixed vegetables
- 2 cups of chicken broth or water
- ½ tablespoon of nutmeg
- ½ tablespoon of black pepper
- ½ tablespoon of cumin
- Salt as prefer taste
- 2 tablespoons of olive oil
Instruction
In a pot add the mix of vegetables and olive oil and let it cook for about 3 minutes until the vegetables are tender, then add the cumin, nutmeg, black pepper, and salt.

Add the chicken broth and the couscous, and stir the mix until the water is all gone. Lower the heat and cover for about 7 to 9 minutes.


Plating:
On the side of the couscous dish, I like to add Tilapia and macaroni salad to have a full meal.
